Since my OG Cucumber and Avocado Rolls went viral on TikTok and Instagram (thanks to all of your support and love ❤️), I decided to make a few cucumber roll versions, and this version is TOP TIER! Made with cucumber ribbons, avocado, egg whites and spicy mayo, these are the ultimate low-carb, high-protein snack.

Why You’ll Love Egg White Cucumber Rolls

These egg white cucumber rolls are not only quick and easy to prepare, but they are incredibly versatile. This recipe is vegetarian-friendly, but you can practically make them with any toppings or fillings you like.

Make these for breakfast or enjoy them as a snack or light lunch – either way, they won’t disappoint.

Feel free to also transform these into a kid-friendly 👦 version by rolling up your child’s favourite meats, spreads and veggies and cutting the rolls into smaller bite-size pieces. Scroll down for some more variations and substitutions!

How to Prepare Egg White Cucumber Rolls

🔪 Peel the top of the cucumber until it is even, and start to make strips with a Y-peeler or a potato peeler. Spread out the strips on a paper towel, as cucumbers have a lot of water content.

🥒 Arrange the cucumber strips in a row making sure they overlap each other slightly. Pat them down with a paper towel to remove any excess moisture.

🍴Now, you can add your favorite fillings. For this recipe, I added mashed avocado, cooked egg whites, and spicy mayo. Feel free to season your mashed avocado with some salt and pepper if needed.

😋 Gently roll it up and cut into bite-size pieces. You can also secure it with toothpicks for ease and make cuts between each toothpick. Enjoy!

Nonna’s Tip

I used “Everything but the Bagel” seasoning on top, but it’s completely optional. You can also add texture by sprinkling some toasted sesame seeds, chopped nuts, or crispy fried onions on top.

Egg White Cucumber Roll Variations and Substitutions

  1. Use regular mayo, cream cheese, Tzatziki, hummus, ranch or any other spread instead of the spicy mayo. This is your chance to try my homemade Hummus and Mayo recipes!
  2. You are by no means limited to egg whites. Make these with regular scrambled eggs 🥚, or try my Egg Salad recipe.
  3. To make these vegan, omit the egg whites and add in thin strips of bell peppers, carrots 🥕, or your favorite roasted veggies. Use vegan-friendly mayo, instead of regular mayo.
  4. Up the protein content by adding a layer of your favourite cheese 🧀 like cheddar, mozzarella, havarti, feta or goat cheese.
  5. For a seafood twist, replace the egg with smoked salmon and use cream cheese instead of spicy mayo. Follow my Salmon Cucumber Rolls recipe for more detailed instructions.
  6. Substitute egg whites with deli meats such as turkey breast, chicken breast, mortadella, ham, salami or Prosciutto.
  7. Instead of cucumber, you can easily make these roll-ups with zucchini ribbons as well.
  8. If you’d like to make these into lettuce wraps 🥬 instead of cucumber rolls, simply use large sturdy lettuce leaves such as romaine lettuce to roll up your ingredients.

Ingredients

  • Peel the top of the cucumber until it is even, and start to make strips with a Y-peeler or a potato peeler.
  • Add the strips on paper towel as cucumber holds a lot of water. Arrange the cucumber strips in a row making sure they overlap each other slightly. Pat them down with a paper towel removing any excess moisture.
  • In the meantime, cook ½ cup of egg whites in a pan with a little oil or butter. Don't forget to add a pinch of salt to taste. Once the egg whites are cooked, you can roll them up in the pan and remove from heat.
  • Now, you can add your favorite fillings. For this recipe, I added mashed avocado, cooked egg whites, and spicy mayo. Feel free to season your mashed avocado with some salt and pepper if needed.
  • You can also use plain mayo, hummus, ranch, or any other spread of your choice. Add the egg white roll on top, gently roll it up, and cut into bite-size pieces.
