These low-carb 🥚 Egg Sandwiches are the perfect breakfast, lunch, or snack idea! I posted the video a few years back and it went super viral on TikTok and IG. This recipe is a breakfast game changer and an amazing way to elevate eggs. Eggs can be repetitive and boring so this is a fun way to step up your game and hit those ✅ protein goals!

These Egg Sandwiches are a fun twist on a hard-boiled eggs and a great way to add a little more variety to boring 🥚 eggs. You’ll love how quickly they come together and the variety of filling options! Have fun experimenting with flavors and textures in these little bites 😋 . Serve them for an everyday breakfast or pack them for lunch with a side salad. You can even dress them up for brunch by arranging a few different flavor combos on a pretty platter.

How to Prepare Egg Sandwiches

🥚 In a pot on the stove, boil the eggs until hard-boiled (I like 7 to 8 minutes).

💦 Once they’ve boiled, rinse them under cold water (or add them to an ice bath in a bowl) so that they are easy to peel.

🔪 Next, peel the eggs, then use a knife to split them in half and remove the yolk if you prefer.

🥑 Add your favorite sandwich ingredients such as mayo, lettuce, turkey breast and avocado.

😋 Finally, put the egg tops on and then sprinkle with everything but the bagel seasoning.

Nonna’s Tip 🥚

Make sure to submerge the boiled eggs into freezing cold water as soon as they come out of the hot water so that they peel easily.

Variations and Substitutions for Egg Sandwiches

  1. You can use any mayo you like. I love using mayo that’s made with better quality ingredients but you can use any of choice. I also love making my own homemade mayo as well so feel free to adjust.
  2. The sandwich topping ideas are endless for these Egg Sandwiches! Try it with turkey bacon, 🥓 regular bacon, cucumber slices, 🥬spinach, hummus or anything that you personally enjoy inside.
  3. You do NOT need to remove the yolks in these Egg Sandwiches. Sometimes I do, other times I don’t. Removing the yolks creates a lighter texture, while leaving them in adds richness.

How do I properly hard-boil and peel the eggs?
