This is my spin on it and by toasting the bread with mayo it makes it super delicious and crispy. This makes 2 big egg toasts so feel free to adjust. For this recipe you will need:

Ingredients
  

  • 4 hard boiled eggs — cooled and peeled
  • 2 pieces of any bread
  • touch of mayo or butter on each one
  • 1 ripe avocado
  • salt pepper to taste
  • touch of lemon juice
  • if you love hot honey on avocado feel free to add some

Instructions
 

  • Boil the eggs and add them to an ice water bath to cool down completely. Once they are cold you can peel them and set them aside.
  • Slice any favourite bread of choice and put a little bit of mayo on each one. In a hot pan place the slices of bread mayo side down and let them crisp up.
  • Once they are nice and sizzly you can remove them off the heat. In a separate bowl mix the avocado, touch of salt and lemon juice. You are more than welcome to use hot honey if you love it on avocado.
  • Spread the avocado mash onto the toast and gently grate the eggs on top. Add some pepper or hot sauce to taste and enjoy.

Notes

I used Vegenaise but feel free to use any mayo or even butter. Make sure the egg is fully hard boiled and completely cold before you grate it. If you don’t like avocado you can add any other spread like hummus or cream cheese instead. I am using a handheld grater, you can also use a microplane. I haven’t tried a box grater for this because I feel like it would be more difficult
