My recipe was inspired by @healthyishfoods on TikTok. I put my own little spin on it by toasting the 🍞 bread with mayo to make it extra crispy and super delicious.

By finely grating the hard-boiled 🥚 egg, the egg is so fluffy and light, it’s the perfect bite!

How to Prepare Grated Egg Avocado Toast

🥚 Start by boiling 4 eggs in a medium pot on the stove, until hard-boiled. (For a step-by-step, check out my tutorial here: Boiling and Peeling Eggs Perfectly).

🧊 Then, add the eggs to an ice water bath to cool them down quickly and completely.

🧑‍🍳 Once they are cold, peel them and then set them aside.

🍞 Slice your bread of choice and smear a little bit of mayo on each slice.

🔥 In a hot pan place the slices of bread mayo side down and let them crisp up, then remove off the heat.

🍋 In a separate bowl, mix the avocado with a touch of salt and a squeeze of lemon juice.

🥑 Spread the avocado mash onto the toast and then use a zester to gently grate the eggs on top.

🌶️ Finally, sprinkle with some black pepper or add hot sauce to taste and enjoy!

Make sure the egg is fully hard-boiled and completely cold before you grate it.

  4. Top this with freshly cracked black pepper, everything bagel seasoning, or a dash or hot sauce.

Ingredients 

  • 4 hard boiled eggs, cooled and peeled
  • 2 slices bread
  • 1 teaspoon mayo, or butter
  • 1 ripe avocado
  • ¼ teaspoon salt
  • teaspoon pepper
  • 1 tsp lemon juice
  • hot honey, optional

Instructions 

  • Boil the eggs and add them to an ice water bath to cool down completely. Once they are cold you can peel them and set them aside.
  • Slice any favourite bread of choice and put a little bit of mayo on each one. In a hot pan place the slices of bread mayo side down and let them crisp up.
  • Once they are nice and sizzly you can remove them off the heat. In a separate bowl mix the avocado, touch of salt and lemon juice. You are more than welcome to use hot honey if you love it on avocado.
  • Spread the avocado mash onto the toast and gently grate the eggs on top. Add some pepper or hot sauce to taste and enjoy.
