My single-serve peach 🍑crisp is the ultimate summer dessert. If you have just one fresh peach in your kitchen, you’re already halfway to making this incredibly satisfying, comforting treat.

A crisp is a fruit-based, baked dessert with a crumbly topping, typically made from a combo of flour, oats, butter or milk, and spices. In this single-serve recipe, I’m using nutritious oat flour, a touch of brown sugar, crunchy walnuts, and just a bit of milk 🥛to help bind the topping. All-purpose flour will also work just fine or you can make your own oat flour by pulsing dried oats in a food processor until a fine dust forms.

When is Peach Season?

Peach season lasts from approximately July to September, so make this recipe soon, while peaches are bursting with natural juiciness and need hardly any added sweetener. If you don’t love peaches or can’t find them locally, nearly any fresh fruit will work here: berries; pitted stone fruits, such as nectarines, apricots, or cherries🍒 apples, and more.

How to Prepare

Everything gets baked in a single-serve-sized baking dish (such as a ramekin) until the fruit is bubbling and the topping is golden brown. I’m partial to serving this with a scoop of vanilla ice cream. This would also make a decadent breakfast, served with vanilla yogurt.

You can use frozen fruit, but be sure to thaw and drain it before using it in the recipe. Frozen fruit may release more liquid, so you might need to adjust the recipe slightly.

Ingredients 

  • 1 peach, finely diced
  • 1 tablespoon maple syrup , or any sweetener
  • 3 tablespoons oat flour
  • 1 tablespoon walnuts, crushed
  • ½ tablespoon brown sugar
  • 1 pinch salt
  • dash of cinnamon
  • ½ teaspoon baking powder
  • 2 tablespoons milk
  • vanilla ice cream, for serving (optional)

Instructions 

  • Preheat the oven to 375F.
  • Add the diced peach to a ramekin and mix with the maple syrup.
  • In a separate bowl, mix the oat flour, walnuts, brown sugar, salt, cinnamon, baking powder and milk.
  • Pour the oat mixture on top of the peaches.
  • Bake for 35 to 45 minutes, keeping a close eye on the crisp as it bakes, to watch for burning. It should be golden and bubbly.
  • Optionally, serve with a scoop of vanilla ice cream on top and enjoy!
