Who decided smores had to be sweet anyway? Because I’d like to respectfully disagree 😎. Enter Savory Smores — a bougie twist on a campfire classic. Picture this: gooey Brie 🧀, salty prosciutto 🥓, juicy grapes 🍇, and crispy artisan crackers 🍞 stacked into bite-size masterpieces. I’m not saying I peaked, but my friends told me these were life-changing, and honestly, who am I to argue with greatness? Perfect for summer hangs, BBQ grazing, or those nights when you want to feel classy but also eat with your hands like a racoon living its best life 🦝✨.

These Savory Smores are creamy, salty, sweet, and crispy. They’re basically, snack perfection in every bite 😍. The Brie melts into a rich, velvety layer that molds to salty prosciutto like they were meant to be together. The grapes add that juicy pop of sweetness 🍇 that keeps everything bright and fresh, while the artisan crackers bring the crunch that make you forget graham crackers even exist. Not to mention, they’re easy to assemble, require zero cooking if you’re using pre-sliced ingredients, and are totally customizable based on what’s in your fridge.

Ingredients

Here’s all the charcuterie components you’ll need to make my delicious Savory Smores:

Artisanal crackers: I like to make Savory Smores with Artisan Crisps. They come in delicious flavors and they’re thick enough to hold all the filings without breaking.

Soft cheese: My favorite cheese for this recipe is Supreme Brie Bites. They’re encased in a tiny bloomy rind so that they don’t melt off the stick when roasted. Plus, they kind of look like marshmallows, which makes them just perfect for Savory Smores.

Sliced deli meats: I went with prosciutto for its thin texture, which makes it easy to manage as a smore component. Salami and coppacola are both excellent choices for meats and work well in this recipe to balance out the flavors.

Jams and spreads: Fig preserves, red pepper jelly, hot honey, balsamic glaze and whole grain mustard make it easy to build different flavor profiles.

Fruits and veggies: Just like any charcuterie, your Savory Smores can include apples, grapes, olives, pickles, pears, berries, and even grilled veggies. (Think roasted eggplant, caramelized onion and sun dried tomatoes.)

If you have a gas stove, you can also melt your cheese over the open flame – or even over a fireplace or fire pit.

Savory Smores Flavour Pairings

🥓 Prosciutto, Burrata, and Peach Slices — Salty prosciutto wrapped around mild burrata and juicy, sweet peach is basically summer on a cracker.
🧀 Smoked Gouda and Fig Jam — The smoky, savory cheese paired with the soft, earthy sweetness of fig is perfection.
🍏Aged Cheddar, Apple, and Grainy Mustard — Sharp cheddar with crisp apple and a little mustard for a tangy, sweet-savory kick.
🍇 Goat Cheese and Roasted Grapes — Creamy goat cheese with warm, jammy grapes is a great Combination.
🌿 Mozzarella, Basil, and Balsamic Glaze — Try fresh mozzarella with basil and a drizzle of balsamic. It’s simple, fresh, and so satisfying.
🍗 Salami, Manchego, and Pickled Red Onion — The fattiness of the salami gets a bright, tangy lift from the pickled onions.
🍑 Camembert, Mortadella, and Apricot Jam — Ultra-creamy Camembert + sweet, sticky apricot jam is dream worthy when paired with rich mortadella.

Savory Smores Are Best Served With

  • A crisp, cold glass of white wine or bubbles 🥂.
  • Add jam or hot honey 🍯 for some extra magic.
  • During the summer, this goes great with my Watermelon Feta Salad 🍉.
  • Hosting? Round it out with marinated olives 🫒, roasted nuts 🥜, and maybe even a little bowl of hummus.
  • Grilled slices of baguette 🥖 or No Knead Bread.

Ingredients 

  • 24 Artisan Crisps
  • 1 bunch Red Grapes
  • 1 bunch Green Grapes
  • 12 pieces Mini Brie Cheese, Supreme brand
  • 12 slices Prosciutto
  • Jelly , any of choice

Instructions 

  • Note: you don't need a kit to do this. You can char the brie cheese over the gas broiler or on an open fire as I have shown you here.

  • Warm up your Smores Kit as per the directions. Place an entire piece of mini brie directly onto the roasting fork, just as you would a marshmallow. Carefully warm the cheese over the flame until the edges start to soften and the center becomes gooey.

  • Now, add jelly onto the crisp. Once the brie is melty, remove from heat, and place it on a crisp with a ribbon of prosciutto. You can fold or crinkle the prosciutto, if needed.

  • Place a second artisan crisp on top of the warm cheese, gently pressing to sandwich the layers. While still pressing, pull the roasting fork out of the cheese. Enjoy!

Notes

  • Note: If you have a gas stove, you can also melt your cheese over the open flame – or even over a fireplace or fire pit.
  • Choose sturdy crackers: Artisan crackers generally hold up well to handling, heat and toppings. Look for different flavors to complement your toppings. 
  • Bring your cheese to room temp: Let your mini brie rounds set at room temp for 10-15 minutes for more even heating. 
  • Don’t overheat your cheese: Brie softens fast! Just 20-30 seconds over the flame is enough. Make sure to watch it closely to avoid melting it straight off the stick. (Remember, it will keep warming on the cracker.)
  • Boost the flavor: Add fig preserves, hot honey, or fresh herbs like thyme or basil for an extra hit of flavor. And because it’s pretty.

Basically, anything you would put on a charcuterie board is fair game when it comes to savory smores! Pick your favorite crackers, deli meats, cheeses, fruits, jams and chocolates to create your own combos!

What cheese is good for savory smores?

Brie is my favorite, but you could also use Babybel rounds, mozzeralla, smoked gouda, gruyere, smoked cheddar and fontina – or make a spread with a variety of cheeses to try.

What is the best cheese to roast over a fire?

I like to use the Supreme mini brie cheeses, since they don’t melt too fast and fall of your smore stick. (Plus, brie is mind-blowingly delicious.) Babybel rounds are another top choice.

What crackers are good for savory smores?

Opt for a sturdy cracker that can hold all the good stuff. I like to use Artisan Crisps because they come in lots of delicious flavors and can hold lots of toppings without breaking.

How do I keep my cheese from falling off when it’s roasting?

Soft cheese melts FAST. Hold your stick well over the fire, but close enough to get warm. (Don’t put your cheese directly into the flame.) Look for that toasted golden color, and if your cheese starts to shift, remove it from the heat immediately.
