I am sure you have seen me enjoy these on my stories so knew I wanted to make a recipe video for you all so you can make these at home as well. I gotta say…I nailed it! This version makes 🥞 7 mini pancakes, and you can easily scale up if you’re making them for the family or a brunch.

How to Prepare Healthy Banana Pancakes
🍌In a bowl, mash together a banana, an egg, a pinch of salt and a dash of pure vanilla bean paste or vanilla extract.
🥣 Now, add in the oat flour and then mix it all together until you have a thick batter.
🔥 In a pan on medium heat, add some cooking spray and then let it heat up.
🥞 I made 7 mini pancakes because the smaller they are the better they will cook through.

Variations and Substitutions for Healthy Banana Pancakes
- If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flour-like consistency.
- You are more than welcome to use almond flour for these 🍌 Healthy Banana Pancakes as I tested it and it works. I used 1/4 cup almond flour for one medium banana, but if your banana is large you might need to use 1/3 of a cup.
- Add a sprinkle of cinnamon for additional flavor.
- You could absolutely add 🍫 chocolate chips to these Healthy Banana Pancakes as well.
