This version makes 🥞 7 mini pancakes, and you can easily scale up if you’re making them for the family or a brunch.

Plus, they come together in just one bowl, they’re easy to make and absolutely delicious. They’re fluffy and tender, and delicious topped with a drizzle of 🍁 maple syrup.

How to Prepare Healthy Banana Pancakes

🍌In a bowl, mash together a banana, an egg, a pinch of salt and a dash of pure vanilla bean paste or vanilla extract.

🥣 Now, add in the oat flour and then mix it all together until you have a thick batter.

🔥 In a pan on medium heat, add some cooking spray and then let it heat up.

🥞 I made 7 mini pancakes because the smaller they are the better they will cook through.

⏲️ Cook the pancakes on each side for 2-3 minutes or until golden. Enjoy with any toppings you love.

  1. If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flour-like consistency.
  2. You are more than welcome to use almond flour for these 🍌 Healthy Banana Pancakes as I tested it and it works. I used 1/4 cup almond flour for one medium banana, but if your banana is large you might need to use 1/3 of a cup.
  3. Add a sprinkle of cinnamon for additional flavor.
  4. You could absolutely add 🍫 chocolate chips to these Healthy Banana Pancakes as well.

If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flour-like consistency. I used rolled oats the other day and I personally like this texture way more as it’s definitely more fluffy and less mushy.

You can use almond flour in this recipe as well, about 1/4 cup almond flour for one medium banana. I haven’t tried coconut flour, gluten-free flour or whole wheat flour, but I’m sure they would work. Add a bit at a time until you get the right consistency.

Ingredients 

  • 1 ripe banana
  • 1 large egg
  • pinch salt
  • ½ teaspoon pure vanilla bean paste , or vanilla extract
  • cup oat flour

Instructions 

  • In a bowl mix the first four ingredients and make sure your banana is nice and mashed. Add the oat flour and incorporate until you have a thick batter.
  • In a pan on medium heat add some cooking spray and let it heat up a bit. I made mini pancakes because the smaller they are the better they will cook.
  • Cook them on each side for 2-3 minutes or until golden. Enjoy with any toppings you love.

    Easy & delicious! Pair great with real maple syrup. You will probably need to lower the heat after the first batch. Also the small ones cook up so nicely! Thanks Sneji 🙂
