Ingredients 

For the Chicken

  • 1 chicken breast cubed
  • 1 tangerine, 1/4 cup or orange juice
  • salt and pepper to taste
  • 1-2 teaspoons avocado oil or any

For the salad

  • romaine lettuce
  • 1 finely sliced carrot
  • cucumber slices
  • pumpkin seeds optional *
  • ¼ of avocado
  • hemp hearts are optional *

For dressing

  • 2 teaspoons olive oil
  • 1 teaspoon dijon mustard
  • fresh lemon juice to taste
  • salt and pepper to taste
  • 1 teaspoon white wine vinegar or any vinegar you like
  • 1 teaspoon honey or agave

Instructions 

  • Cut one skinless-boneless chicken breast into small cubes.
  • Marinate and grill it for 2-3 minutes on each side. Add it to your salad mix and any toppings of choice.
  • In a separate bowl or measuring glass whisk in the ingredients for the dressing, pour on top of the salad and enjoy.
  • This is absolutely amazing for meal prep if you store your dressing in a separate container.

Notes

You can use any toppings you like , if you don’t feel like making chicken just buy some and cut it up. The dressing can be any you love. Feel free to add tofu or chickpeas for a plant based salad and substitute the honey for agave or maple syrup.
