Ingredients
For the Chicken
- 1 chicken breast cubed
- 1 tangerine 1/4 cup or orange juice
- salt and pepper to taste
- 1-2 teaspoons avocado oil or any
For the salad
- romaine lettuce
- 1 finely sliced carrot
- cucumber slices
- pumpkin seeds optional *
- ¼ of avocado
- hemp hearts are optional *
For dressing
- 2 teaspoons olive oil
- 1 teaspoon dijon mustard
- fresh lemon juice to taste
- salt and pepper to taste
- 1 teaspoon white wine vinegar or any vinegar you like
- 1 teaspoon honey or agave
Instructions
- Cut one skinless-boneless chicken breast into small cubes.
- Marinate and grill it for 2-3 minutes on each side. Add it to your salad mix and any toppings of choice.
- In a separate bowl or measuring glass whisk in the ingredients for the dressing, pour on top of the salad and enjoy.
- This is absolutely amazing for meal prep if you store your dressing in a separate container.
Notes
You can use any toppings you like , if you don’t feel like making chicken just buy some and cut it up. The dressing can be any you love. Feel free to add tofu or chickpeas for a plant based salad and substitute the honey for agave or maple syrup.
