Cut one skinless-boneless chicken breast into small cubes.
Toss the cubes with the orange juice, salt, pepper and avocado oil. Grill it for 2-3 minutes on each side. Add it to your salad mix and any toppings of choice.
In a separate bowl or measuring glass whisk in the ingredients for the dressing, pour on top of the salad and enjoy.
If meal prepping, store your extra dressing in a Mason jar in the fridge so it's ready to go when you need it.
