Pizza Beans
Ingredients
- 1 tablespoon olive oil
- 15 pepperoni slices, nitrate-free
- 1 small onion, finely diced
- 1 bell pepper, diced
- 4 garlic cloves, minced
- 1 teaspoon Italian seasoning
- Chili flakes, to taste
- 2 small cans butter beans, drained and rinsed
- 300 milliliters pizza sauce, one jar, I love Rao's
- ½ cup water, or broth, plus more to thin the sauce as needed
- salt and pepper, to taste
- 1 cup shredded mozzarella
- ¼ cup grated Parmesan
- 1 Parmigiano rind, optional
- fresh basil, for serving
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the pepperoni and cook until slightly crispy. Remove a few pieces for topping, if desired.
- Add the onion and bell pepper. Cook for 4 to 5 minutes, until softened. Stir in the garlic, Italian seasoning, salt, pepper, and chili flakes. Cook for 30 seconds.
- Add the butter beans, pizza sauce, water and Parmigiano rind. Stir and simmer uncovered for 10 to 15 minutes, until the sauce thickens slightly. When thickened, remove the rind.
- Sprinkle the mozzarella, parmigiano cheese and place the pepperoni on top. Place it in the oven and broil for 3-5 minutes making sure you use an oven-safe skillet.
- Top with fresh basil. Serve warm.
