Pizza Beans are a cozy one-skillet meal with creamy butter beans, crispy pepperoni, pizza sauce, and plenty of melty cheese. Hearty, protein-packed, and full of classic pizza flavor.
½cupwateror broth, plus more to thin the sauce as needed
salt and pepperto taste
1cupshredded mozzarella
¼cupgrated Parmesan
1Parmigiano rindoptional
fresh basilfor serving
Instructions
Heat the olive oil in a large skillet over medium heat. Add the pepperoni and cook until slightly crispy. Remove a few pieces for topping, if desired.
Add the onion and bell pepper. Cook for 4 to 5 minutes, until softened. Stir in the garlic, Italian seasoning, salt, pepper, and chili flakes. Cook for 30 seconds.
Toasting the spices for a few seconds before adding the wet ingredients makes the flavors and aromas more pronounced.
Add the butter beans, pizza sauce, water and Parmigiano rind. Stir and simmer uncovered for 10 to 15 minutes, until the sauce thickens slightly. When thickened, remove the rind.
Sprinkle the mozzarella, parmigiano cheese and place the pepperoni on top. Place it in the oven and broil for 3-5 minutes making sure you use an oven-safe skillet.
Top with fresh basil. Serve warm.
Notes
Bean substitutions: Swap butter beans for cannellini beans, Great Northern beans, or navy beans. They're all creamy and mild and go well with the rest of the ingredients.
