Eggs are my go-to breakfast. Seriously, there’s rarely a time when I don’t feel like having eggs in the morning. Because of this, I’ve perfected how to make over-medium eggs since that’s my favourite way to enjoy them.

In this tutorial, I’ll show you how to make the perfect over medium eggs – golden, runny yolks with tender, firm whites 🍳.

Two slices of toasted bread each topped with a fried egg and sprinkled with pepper on a white plate, next to a small bowl of pepper, two eggs on a board, and a striped kitchen towel.

Why You’ll Love My Over Medium Eggs

Many people struggle with making over-medium eggs, particularly when it comes to flipping them without breaking the yolk.

However, my method offers a simple and foolproof way to achieve the perfect over-medium egg. You can finally enjoy a runny egg without compromising the yolk or having to worry about slimy, uncooked whites 😵‍💫.

Nonna’s Tip 🥚

To gauge doneness, I like to gently touch the yolk with my fingers to see how soft it is.

A slice of toasted bread topped with a sunny-side-up egg with a runny yolk, sprinkled with black pepper, on a white plate with a gold fork. A cup of coffee and a striped cloth are in the background.

How to Prepare Over Medium Eggs

🍳 Heat a ceramic non-stick pan on the stove on medium-low heat. Then, add a touch of oil and gently crack in 3 eggs, making sure they are spaced apart.

🥚 Take a silicone, slotted spatula, nestle it under the egg and gently flip each one, making sure not to break the yolks. Let the eggs cook on the other side until desired doneness. I like to gently touch the yolk with my fingers to gauge the softness.

⏲️ Let the eggs cook for 2 minutes.

🍽️ Transfer the eggs out of the pan onto a plate and enjoy!

Common Questions

Do I need to use a silicone spatula?

When it comes to ceramic non-stick skillets, you should always be using silicone utensils as metal will damage the pan. My favorite silicone spatula is linked HERE.

How can I tell if the eggs are over medium?

The whites should be fully set and opaque, while the yolk should have a thickened consistency with a slightly runny center. Gently touch the yolk to gauge its firmness without breaking it.

What pan do you use?

My favorite non-stick ceramic skillets are linked HERE!

Can I use this method for other types of eggs, like quail eggs?

Yes, you certainly can! However, keep in mind that you will have to adjust cooking time as smaller eggs cook faster.

Do I have to use a non-stick pan?

Non-stick pans work best in this scenario as they prevent the egg from sticking to the pan during the flipping process. However, a well-seasoned cast iron pan would also work. Alternatively, check out my tutorial on How To Make Stainless Steel Non-Stick.

The medium low heat instructions helped. I used to fry on a hotter temp and the whites got crunchy stuff on them which I didn’t like. THANKS!

There is also a method so you do not have to flip the eggs.
Add a bit of water to the pan and cover .
The Steam will cook the tops and make the eggs lift off the pan if using a non stick pan.
    Usually about a minute.
Really depends on the heat and pan.
You may need a bit of trial and error to find your sweet spot. Also so works for those that do not like runny yolks. You just let them steam longer
