Prep Time 5 mins
Servings 2 small

Ingredients

  • two pitted mangoes
  • 2 tablespoons plain yogurt — any you like
  • drizzle of agave or honey
  • juice of 1/2 a lime
  • lime zest for presentation

Instructions

  • Cut the mango along side the pit and scoop out the flesh from both sides. You can cut out and enjoy the flesh around the pit as a chefs treat or even add it in the food processor as well. Add the yogurt, agave, lime juice and give it a blend. Feel free to use a blender as well but a food processor is easier.
  • Once it’s smooth, transfer it into a small baking loaf dish or a foil loaf dish and cover it with a lid or plastic wrap.
  • Pop it in the freezer for at least 5-6 hours. If you are using frozen fruit you can skip this step and enjoy it right away. Garnish with lime zest and enjoy.

Notes

This recipe would even be lovely if you use popsicle molds. If you use frozen fruit you will be able to serve it and enjoy it right away.
You can use any sweetener of choice and as much as you like depending on how ripe/sweet the fruit is.
Any yogurt will work for this recipe or even some coconut milk cream instead if you are plant-based.
