How to Prepare

⏲️ First, preheat the oven to 375F (190C).

🥚 Next, in a food processor (or blender), add the cottage cheese, egg, and spices. Blend until creamy.

📜 Now, pour the mixture out evenly onto a 9 by 13 inch baking sheet lined with parchment paper.

🔥 Lastly, bake for 30-35 minutes or until the flatbread is set and golden.

Variations and Substitutions for Cottage Cheese Flatbread

  1. Instead of turkey, you can use other deli meats such as ham, roast beef, or even salami.

Can i use ricotta or another substitute for cottage cheese?

I have only made this recipe using cottage cheese. Full-fat ricotta cheese is often a good substitute for cottage cheese, though I can not verify the results in this recipe.

Does this taste like bread?

No, not really, but the protein-packed “flatbread” does serve as a delicious bread alternative and sandwiches the ingredients beautifully. It’s not bread, but it is delicious and acts as a bread in this recipe. Adding some fresh or dried herbs to the batter is a great way to add flavor.

Can i make this in an air fryer?

Yes, you can make the flatbread in an air fryer set to 375F, but the dimensions of the flatbread may need to be smaller to fit in the air fryer tray.

Can this be made in advance?

You can make the “flatbread” in advance and store it in the refrigerator between two sheets of parchment paper and reheat it in a lightly oiled pan over medium heat or heat it in the air fryer for a few minutes. However, it’s best served fresh!

Ingredients 

The Flatbread

  • ¾ cup cottage cheese, 2%
  • 1 egg
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder

Additional Toppings

  • 1 teaspoon mayonnaise
  • 4 slices turkey breast
  • ¼ cup baby arugula
  • 2 slices tomato
  • 1 teaspoon balsamic glaze

Instructions 

  • Preheat the oven to 375F (190C).
  • In a food processor (or blender), add the cottage cheese, egg, and spices. Blend until creamy.
  • Pour the mixture out evenly onto a baking sheet lined with parchment paper. My baking sheet was 9 by 13 inch but any larger one will also work as long as you spread the batter into one even layer.

  1. Should be 1/2 cup of cottage cheese and one egg. This didn’t work at all. Also you need to specific about how people should spread it. Especially if you didn’t spread it all the way around your sheet pan.

    My husband and I didn’t know what to expect really. We made the flatbread and it came out perfectly. Eat it right away for best texture. We wrapped turkey slices, fresh baby greens from the garden, fresh green onions, drops of creamy and ground dijon mustard and homemade red wine vinegar dressing. It was wonderful

    My husband and I had no idea what to expect. I should have taken pictures because it came out beautifully. We wrapped turkey, fresh baby salad leaves, drops of ground dijon creamy dijon, homemade Italian red wine vinegar dressing and made wraps. They were wonderful. Nice diversion from bread sandwiches.

  4. How big of a baking sheet??? I have 9″x6″ and 8″x10″ for my toaster oven, and 4 other sizes all the way up to 21″x16″ for my big oven.

    1. 8 by 1o should work beautifully. Mine was 9 by 13 but mine was too big for the amount of batter I had so I spread it evenly into a rectangle and baked it.

  5. Your tip in the middle of the article says you like to use “full fat cottage cheese” which is 4%, but the recipe calls for 2%, which is low-fat cottage cheese. Which produces better flatbread?

    Spread onto baking sheet is a little vague. I’d be using a half sheet pan. It’d be great to add some sort of dimensions for how to spread it… 8″x12″…

    1. My baking sheet was 9 by 13 inch but any larger one will also work as long as you spread the batter into one even layer. I added this in the directions 🙂

    3. You spread it out so that it’s in the shape of a tortilla, a big tortilla. It’s not that challenging and doesn’t have to be perfect, it’s just a pita
