Imagine guilt-free bread 🍞! This healthy and protein-packed alternative to traditional bread has gone viral for a reason. It’s giving texture, taste and simplicity all in one. With 25 grams of protein per serving, this naturally gluten-free Cottage Cheese Flatbread will take your sandwich game to new heights. Whether you’re trying to eat healthier or pack more protein into your diet for those gains 💪, this Viral Cottage Cheese Flatbread will become your new obsession!
Why You’ll Love Cottage Cheese Flatbread
Cottage cheese 🧀, eggs and spices – that’s IT! All you need to do is throw these ingredients into a blender to make this ridiculously tasty cottage cheese flatbread.
The texture is crispy on the outside as the cheese melts and crisps up in the oven, with a slight chewiness as you bite into it 🤤. The flatbread is light and airy without any of that denseness you feel when you bite into traditional bread. The taste is mild and creamy, making it a perfect base for any toppings and the ideal “bread” for a healthy sandwich 🥪.
Most importantly, this recipe is totally customizable; you can add as little or as much spice and flavor as you like to make it your own!
How to Prepare
⏲️ First, preheat the oven to 375F (190C).
🥚 Next, in a food processor (or blender), add the cottage cheese, egg, and spices. Blend until creamy.
📜 Now, pour the mixture out evenly onto a 9 by 13 inch baking sheet lined with parchment paper.
🔥 Lastly, bake for 30-35 minutes or until the flatbread is set and golden.
🧊 Let it cool for 5-10 minutes; then, on one side of the flatbread, add your favorite sandwich toppings and enjoy!
Nonna’s Tip 🥪
I like using full-fat cottage cheese in this recipe for the best results. Feel free to use any sandwich toppings of your choice and make this sandwich 🥪 your own!
Variations and Substitutions for Cottage Cheese Flatbread
- Instead of turkey, you can use other deli meats such as ham, roast beef, or even salami.
- Add dried 🌿 herbs like basil, oregano, or thyme for extra flavor. You can also sprinkle some crushed red pepper flakes or black pepper for a spicy kick.
- Instead of mayo, you could use a thin layer of mustard, pesto, or spicy mayo on the bread before adding the arugula and deli meat.
- For a vegetarian version, skip the meat and use sliced vegetables such as 🍅 tomatoes, bell peppers, or grilled mushrooms.
- Instead of baby arugula, you can use spring mix or Romaine lettuce instead.
Other Sandwich Recipes
Best Served With

- Extra spicy mayo on the side.
Common Questions
I have only made this recipe using cottage cheese. Full-fat ricotta cheese is often a good substitute for cottage cheese, though I can not verify the results in this recipe.
No, not really, but the protein-packed “flatbread” does serve as a delicious bread alternative and sandwiches the ingredients beautifully. It’s not bread, but it is delicious and acts as a bread in this recipe. Adding some fresh or dried herbs to the batter is a great way to add flavor.
Yes, you can make the flatbread in an air fryer set to 375F, but the dimensions of the flatbread may need to be smaller to fit in the air fryer tray.
You can make the “flatbread” in advance and store it in the refrigerator between two sheets of parchment paper and reheat it in a lightly oiled pan over medium heat or heat it in the air fryer for a few minutes. However, it’s best served fresh!

Nutrition
Nutrition information is automatically calculated, so should only be used as an approximation.
Should be 1/2 cup of cottage cheese and one egg. This didn’t work at all. Also you need to specific about how people should spread it. Especially if you didn’t spread it all the way around your sheet pan.
Hi K, does this mean that 1/2 cup cottage cheese and 1 egg worked for you? The flatbread is meant to be a flexible recipe, so as long as the batter is spread relatively thin and baked until browned and golden you’re good. You can also watch how I spread the batter here: https://www.youtube.com/watch?v=D-NFSiYxGiM&t=27s
Mine came out perfectly just as written
Yay, so glad to hear it Dede!
It turned out delicious, but fell apart. Should I blend the mixture less, or reduce cooking time?
Hi Tod! Do you mean that the sandwich fell apart or the flatbread was crumbly? Let me know so I can try to help you problem solve.
My husband and I didn’t know what to expect really. We made the flatbread and it came out perfectly. Eat it right away for best texture. We wrapped turkey slices, fresh baby greens from the garden, fresh green onions, drops of creamy and ground dijon mustard and homemade red wine vinegar dressing. It was wonderful
Yum yum!! Jamie, this sounds perfect!
This was great, only issue is it stuck to the parchment paper in the center…any suggestions?
Hi Eileen, glad you enjoyed! Next time, you could spray the parchment paper with cooking spray.
My husband and I had no idea what to expect. I should have taken pictures because it came out beautifully. We wrapped turkey, fresh baby salad leaves, drops of ground dijon creamy dijon, homemade Italian red wine vinegar dressing and made wraps. They were wonderful. Nice diversion from bread sandwiches.
Delicious and easy!!
I agree!! Thank you, Beth!! ❤️
How big of a baking sheet??? I have 9″x6″ and 8″x10″ for my toaster oven, and 4 other sizes all the way up to 21″x16″ for my big oven.
8 by 1o should work beautifully. Mine was 9 by 13 but mine was too big for the amount of batter I had so I spread it evenly into a rectangle and baked it.
Your tip in the middle of the article says you like to use “full fat cottage cheese” which is 4%, but the recipe calls for 2%, which is low-fat cottage cheese. Which produces better flatbread?
Hi Emily, full fat or 2% is great. I used 2% for this recipe and will clarify on the post
Spread onto baking sheet is a little vague. I’d be using a half sheet pan. It’d be great to add some sort of dimensions for how to spread it… 8″x12″…
My baking sheet was 9 by 13 inch but any larger one will also work as long as you spread the batter into one even layer. I added this in the directions 🙂
I really wish you had made the pan size correction because I have just wasted the ingredients following the 9×13 instructions. Hopefully the 1 cup cheese and 2 egg viral recipe turns out better😞
Hi Kelly, I’m not sure what went wrong here as 9×13 is the pan size I recommnend.
Just so you know, I didn’t spread my batter onto the whole baking sheet though as my baking sheet was still too big for the amount of batter I had.
You spread it out so that it’s in the shape of a tortilla, a big tortilla. It’s not that challenging and doesn’t have to be perfect, it’s just a pita
What size of baking sheet did you use ?
My baking sheet was 9 by 13 inch but any larger one will also work as long as you spread the batter into one even layer.
Just so you know, I didn’t spread my batter onto the whole baking sheet though as my baking sheet was still too big for it.
Can I use ricotta instead of cottage cheese?
Definitely can 🙂
