This Cheesy Baked Cauliflower Dish will be your new favourite side. I was having one of those late-night, genius-strike moments. You know, the kind where you think you’ve cracked the code to world peace ☮️ or, in this case, the ultimate low-carb side dish. At first, I was thinking mashed cauliflower, but then, like a bolt of inspiration, I realized: roasting it in creamy Boursin cheese is the way to go. Think of Cauliflower Gratin, but better!

Introducing my Cheesy Baked Cauliflower. It’s a low-carb dream come true, a side dish so incredible, it’ll make you question why you’ve ever settled for boring old potatoes. Imagine a cloud of creamy, cheesy cauliflower, roasted to golden perfection. It’s topped with Parmigiana Reggiano cheese which will have your tastebuds doing the tarantella 💃.

How to Prepare

🔥 Preheat your oven to 400°F (200°C)

🔪 Using a sharp knife, cut up the cauliflower into bite-sized pieces.

🌿 Next, add the cauliflower to a baking dish and place about 1/2 the block of herb Boursin cheese in the middle.

🧂Now, add in a pinch of salt and pepper. Drizzle over a tiny amount of olive oil and pour in the broth (or water) through the side.

⏲️ Bake uncovered for 35 to 40 minutes. Now, take it out of the oven, mix it all together, and enjoy.

Raw cauliflower works better than frozen cauliflower in this recipe, since the frozen variety holds a lot of water, resulting in a less creamy, more watery finished dish.

Variations and Substitutions for Baked Cauliflower Dish

  1. This recipe will absolutely work just as well with 🥦 broccoli.
  2. If you don’t have Boursin, mix some cream cheese with your favorite chopped 🌿 herbs and then add that to the center of the baking dish.
  3. Feel free to add 🧄 garlic powder, onion powder, or paprika to this Baked Cauliflower Dish for additional flavor.
  4. Use whatever broth you love in this dish: vegetable, chicken, beef, or bone broth will work. If you don’t have, simply use more water instead.
  5. You can also add additional veggies to this mix. Thinly sliced 🥕 carrots, onions, or bell peppers would be delicious and add nice color as well.
  6. If you like, add some 🌶️ heat to this Baked Cauliflower Dish. You can drizzle with a chili oil, or add some chili flakes to the dish before baking.

Ingredients 

  • 5 cups raw cauliflower florets
  • 100 grams Boursin cheese, 3/4 of a block
  • ¼ teaspoon salt
  • 2 teaspoons olive oil
  • ½ cup broth , or water
  • 1 tablespoon Parmigiano Cheese , optional

Instructions 

  • Preheat the oven to 400°F (200C). Add the cauliflower to the baking dish, sprinkle of salt and a drizzle of olive oil on top. Nestle in the Boursin cheese in the middle and pour in the broth (or water).
  • Note: You can add the whole block of Boursin or as much as you like (I added ¾ of it). Feel free to use any broth of choice.
  • Bake uncovered for 35 to 40 minutes, take it out of the oven, mix it all together and enjoy.
  • Store any leftovers in the fridge.

    I added a bit of garlic powder to my cauliflower & I used freshly grated Parmesan at the end & this dish was perfection!! So delicious & flavorful. It’s also super easy to make!
