Why You’ll Love Peanut Butter Jelly Cottage Cheese Toast

This cottage cheese toast is creamy, crunchy, sweet, and savoury in every single bite. It’s protein-packed 💪 thanks to the cottage cheese and peanut butter while the jam brings the sweet side. It’s quick, easy, and endlessly customizable. You can use whatever jam you love, switch up the nut butter, and can even swap the cottage cheese for ricotta or cream cheese if you prefer. This peanut butter jelly breakfast is perfect for breakfast, snacks, or when you something tasty right now but can’t be bothered with anything complicated 🙌.

Ingredients

Sourdough: The perfect sturdy base. I love the tang of sourdough here, but honestly, any bread you have on hand will do as long as it can hold all the toppings without falling apart on you.

Cottage cheese: This is where the magic happens! Creamy, protein-packed, and adds that luscious texture. You can make your own Homemade Cottage Cheese or use your favourite store-bought brand.

Jam: Strawberry 🍓 is my go-to, but any jam will work! Try blueberry, raspberry, fig, or even peach jam.

Peanut butter: Natural peanut butter brings the nutty, salty goodness that ties everything together 🥜. Almond butter, cashew butter, or even sunflower seed butter would be great swaps if you want to switch it up.

Nonna’s Tip 🍞

Make sure to use sturdy, good-quality bread (like sourdough or multigrain) so your toast can handle all the toppings without getting soggy.

Variations and Substitutions for Peanut Butter Jelly Cottage Cheese Toast

  1. If you’re dairy-free, you can swap the cottage cheese for a thick plant-based alternative 🌱 like coconut yogurt or a dairy-free cream cheese.
  2. Change up the nut butter 🥜! Almond, cashew, or sunflower seed butter🌻 all can work here.
  3. Use any jam flavour you love here — strawberry, blueberry, raspberry, peach, fig. If you want something homemade, try my Chia Jam or Cherry Jam.
  4. Add a drizzle of honey 🍯, maple syrup 🍁, or even a sprinkle of cinnamon for extra flavour.
  5. Want more crunch? Sprinkle on chia seeds, hemp hearts, or crushed nuts.

Common Questions

Can I make this nut-free?

You can skip the nut butter altogether or swap it for a seed butter (like sunflower or pumpkin seed butter).

What other bread can I use besides sourdough?

Anything sturdy works, even a good seedy cracker or rice cake if you’re out of bread 🍞. Just avoid super soft bread, as it will get soggy and fall apart.

Ricotta or cream cheese will give that creamy base too. Just in keep in mind the protein content will be a little lower than with cottage cheese.

This toast is best eaten right away! No one likes soggy toast. However, you can make your cottage cheese ahead of time.

how can i boost the protein even more?

Add a soft-boiled egg on the side 🥚, sprinkle on some hemp hearts, or pair it with a protein-packed smoothie.
