These are my fantastic No Bake Chocolate Balls that are made from, wait for it, almond pulp! After posting my delicious homemade 🥛 Almond Milk recipe, I had hundreds of comments and DM requests asking me to make something with the leftover almond pulp. Well, this is it! These are so incredibly easy and packed with nutrients. These are a must-try.

These No Bake Chocolate Balls 🍫 could not be better. They come together so quickly and no baking is required! Plus, they use up the almond pulp from my almond milk recipe, so they’re no-waste too. These are also incredibly versatile: absolutely add in whatever flavor options and add-ins you love. Pack them up for a work break snack, or keep them in the fridge when you need a little sweet bite 😋. These also are a great gift idea in a cookie tin with a beautiful ribbon.

How to Prepare No Bake Chocolate Balls

🥛 After you make my almond milk recipe, you will notice you have almond pulp left behind.

🍯 Add the pulp to a food processor with hemp hearts, cacao powder, honey, nut butter and ground walnuts.

🌀 Process the ingredients until you have a nice dough.

🥄 Now, take a tablespoon, scoop out a little bit of the mixture and roll it into a ball (I got 14 chocolate balls).

🥥 Roll them into your favorite topping such as coconut, cacao, or any nuts of choice.

❄️ Refrigerate for a few hours and enjoy.

Make sure the almond pulp is not too wet by squeezing out any remaining nut milk.

Ingredients 

  • 1 cup almond pulp
  • 1 tablespoon hemp hearts
  • 1 tablespoon cacao powder
  • cup honey, or agave
  • ½ cup nut butter, or seed butter
  • ¾ cup ground walnuts, any nuts you love
  • toppings for rolling the balls

Instructions 

  • Once you make my almond milk recipe, you will notice you have pulp left behind. Squeeze out any remaining nut milk and make sure the pulp is not too wet.
  • Add the pulp to a food processor with the rest of the ingredients and process until a nice dough-like paste forms.
  • Use a tablespoon measuring spoon to scoop out a little bit of the mixture and roll it into a ball. I made 14 chocolate balls using this recipe, but you can make them as big or as small as you like.
  • Roll the balls into your favorite toppings, such as coconut, cacao, or any nuts of your choice. Refrigerate for a few hours before enjoying. You can store these in a container in the fridge, as they will last for at least a week. Enjoy!
