Why You’ll Love Cottage Cheese Eggs

Picture this: you with a warm cup of coffee ☕️ or tea, enjoying your morning scroll 📱while breakfast cooks itself. Simply combine the ingredients into one baking dish, set it, and forget it! These cottage cheese eggs only take 20 minutes and come out delicious, creamy, and packed with protein – with virtually no prep and minimal clean up 🫧. Serve these perfectly fluffy, creamy eggs on a piece of toasted sourdough with sliced avocado 🥑, or bake them with your favorite herbs 🌱 and veggies for the ultimate breakfast bowl. Bon appetit!

How to Prepare

🌡️ Preheat the oven to 375F (190C).

🧀 Add the cottage cheese to the middle of an 8 by 8 inch baking dish. Drizzle the dish and cottage cheese with olive oil.

🍳 Crack the eggs into the baking dish (around the block of cottage cheese), and season with salt and pepper to taste.

♨ Bake for 20-22 minutes or until the eggs have set. I like a softer egg, so feel free to adjust the bake time.

🥄 Take the baking dish out of the oven and stir the warm cottage cheese together with the eggs.

🥓 Serve on toast, in pitas, for sandwiches, or on the side of bacon/sausage for breakfast!

Nonna’s Tip ⏲️

I like my eggs soft baked, but if you prefer firmer eggs you can always add more time. They will continue to cook through residual heat, so 18-22 minutes is the sweet spot!

Variations and Substitutions for Cottage Cheese Eggs

  1. Add your favorite herbs 🌱 and veggies 🍅 to this dish before baking. Dice them up and scatter around the cottage cheese and eggs, then mix once done!
  2. Cottage cheese gives this recipe extra protein, but feel free to substitute for your favorite soft cheese 🧀, such as feta, Boursin, or goat cheese.
  3. Feel free to adjust the time if you like your eggs softer or firmer. The sweet spot is 18-22 minutes depending on your preference. Any longer and the eggs 🍳 will be too firm to mix with the cottage cheese.
  4. Salted butter 🧈is a flavorful substitute for olive oil, just be sure to adjust the amount of salt you add to taste.
  5. If you’re serving brunch for a crowd, you can double this recipe. Use a 9×13 baking dish for more surface area and you won’t have to adjust the cooking time ⏲️.

Common Mistakes to Avoid

For perfect cottage cheese eggs every time, avoid these common mistakes:

  • Don’t overcook your eggs: You want these to be soft baked so they mix well with the cottage cheese for that perfect creamy texture. Remember, the eggs will continue to cook through residual heat for a few minutes after they’ve been removed from the oven.
  • Don’t mix the eggs and cottage cheese before baking: Simply place the cottage cheese in the center of your baking dish, and crack the eggs around the center. Do not mix! You want the eggs to set before mixing, since that’s what gives this dish its unique texture.
  • Don’t undercook the eggs: You’ll know the eggs are fully set when the whites are no longer transparent and the yolks are your desired consistency.

Can I reheat cottage cheese eggs?

Reheat cottage cheese eggs in the microwave for 30-seconds to a minute.

Can I double this recipe?

Yes! If you’re meal prepping or baking brunch for a crowd, feel free to double this recipe. Use a bigger baking dish (such as a 9 x 13), add two cups of cottage cheese, and double the eggs.

Can I add veggies to this dish?

Absolutely! You can add tomatoes, spinach, mushrooms, onions, peppers, fresh herbs, or any of your favorite veggies to this dish. Simply dice them up and spread them around the cottage cheese and eggs. You likely won’t need to adjust your bake time.

This was absolutely delicious, will definitely make it again. As I was only cooking for 1 person, I used 1/4 cup of cottage cheese and 2 eggs. I added chopped red peppers for added flavour. Enjoyed with 2 pieces of plain toast.

So quick and so delicious. Next time I will only back 18 minutes or less. 20 minutes was too long, yolks were starting to set up. Looking forward to making it again.
