These one-dish cottage cheese eggs only take 20 minutes to bake and come out delicious, creamy, and packed with protein - with virtually no prep and minimal clean up.
Add the cottage cheese to the middle of an 8 by 8 inch baking dish. Drizzle the dish and cottage cheese with olive oil.
Crack the eggs into the baking dish (around the block of cottage cheese), and season with salt and pepper to taste.
Bake for 20-22 minutes or until the eggs have set. I like a softer egg, so feel free to adjust the bake time. Please keep an eye on it as some people had a perfect outcome at the 15 min mark.
Take the baking dish out of the oven and stir the warm cottage cheese together with the eggs.
Serve on toast, in pitas, for sandwiches, or on the side of bacon/sausage for breakfast!

Add-Ins: Add your favorite herbs and veggies to this dish before baking. Dice them up and scatter around the cottage cheese and eggs, then mix once done!
Cheese Substitutions: Cottage cheese gives this recipe extra protein, but feel free to substitute for your favorite soft cheese, such as feta, boursin, or goat cheese.
Time Adjustments: For soft baked eggs, set your timer for 18-20 minutes. For firmer eggs, bake for around 22 minutes, depending on your oven.
