- 1 tablespoon avocado oil
- 1 small yellow onion, finely chopped (or ½ large onion)
- 3 cloves garlic, finely chopped
- 1 inch fresh ginger, peeled and finely chopped
- ½ tablespoon butter, optional
- 2 teaspoons garam masala
- ¼ teaspoon turmeric powder
- 15 ounces butter beans, drained and rinsed, one 15-ounce can
- 15 ounces crushed or pureed tomatoes, one 15-ounce can
- ¼ cup heavy cream, coconut cream, or plain Greek yogurt
- ½ teaspoon salt , to taste

Instructions
- In a pan over medium-high heat, warm the oil. Add the onions and cook, stirring occasionally, until they start to soften, about 5 minutes.
- Reduce heat to medium. Add the garlic and ginger and cook, stirring occasionally, until the onions, ginger, and garlic are lightly brown, 5 minutes. Add the butter (if using), then add the garam masala and turmeric and let cook for 1 minute.
- Add the drained beans and the canned tomatoes. Season to taste with salt. Cook at medium heat to allow the flavors to meld, 5 minutes.
- Turn off the heat. Stir in the heavy cream and garnish with cilantro (if using). Serve with rice or naan, and lemon wedges for squeezing.
