These are the best 3 ingredient almond honey cookies in the world. With just a few healthy ingredients, these are gluten-free, dairy-free, and plant-based. And they are low in sugar, with just 2 tablespoons of honey, divided into 18 cookies; but feel free to add more honey if you like. I love topping these cookies with an extra drizzle of honey, powdered sugar, and some crushed almonds or walnuts. Ingredients
  

  • ¾ cup apple purée, or 2 ripe bananas (1 cup mashed)
  • 2 tablespoons honey or agave
  • 2 ½ cups almond flour (preferably blanched)

Instructions
 

  • Preheat the oven to 350F. Line a baking sheet with parchment paper or a baking mat.
  • In a bowl, add the apple purée (or mashed bananas) and honey, and give it a stir. Then stir in the almond flour until everything is incorporated into a nice cookie-like batter.
  • Roll the dough into 18 small, equal-size balls and place on the baking sheet, leaving 1 to 2 inches between the cookies. Bake until the cookie tops are brown, 20 to 25 minutes. Let cool and enjoy!

Notes

Keep an eye on the cookies as they bake, to make sure they don’t burn. Some ovens run cold or hot, which effects the total bake time. 
I prefer the texture of blanched almond flour (a superfine flour made from almonds with the skins removed), but regular almond flour is fine as well. 
You can also try adding flavorings to the batter, such as vanilla or almond extract, cinnamon, and lemon or orange zest
While the cookies are cooling, top with crushed almonds or walnuts
Right before serving the cookies, place them on a platter and drizzle with extra honey and/or some powdered sugar
Feel free to modify the ingredient quantities to your preference: more apple or banana will make the cookies more moist; more honey will make them sweeter.
You can use store-bought apple sauce or make your own apple puree by peeling, coring, and cubing your favorite variety of apples. Add to a saucepan with a few tablespoons of water and cook over medium heat for about 10 minutes, until soft. Use a fork, a potato masher, or a blender to mash the cooked apples into a smooth puree.
