Preheat the oven to 400F (200C). Line a baking sheet with parchment paper.
Slice the onions into rings with a knife or use a mandoline. Add an even layer of cheese to the baking sheet followed by the onion slices.
Make sure you arrange each onion right next to each other.
Drizzle a tiny bit of olive oil onto each one and season with Greek seasoning.
Bake for 15-20 minutes or until golden! Let them cool for 10 minutes. Enjoy with sour cream, a cilantro lime crema, French onion dip, or my homemade tzatziki recipe!

Onion varieties: Sweet onions are perfect for balancing the savory Parmigiano Reggiano cheese. Feel free to use yellow onions or your favorite variety.Â
