- 1 tablespoon mayo, enough to thinly cover each toast
- 1 heirloom tomato
- 1 pinch salt
- 1 drizzle olive oil, optional
- fresh basil, optional
Instructions
- In a food processor, blend the feta, cottage cheese, cream cheese, and lime or lemon zest until smooth and fluffy.
- Spread a thin layer of mayo on both slices of sourdough. Toast in the air fryer at 425°F until golden and crispy. (Alternatively, toast without mayo, or pan-fry with mayo-side down.) Then, spread a generous layer of whipped feta onto the hot toast.
