Use a baggy holder to stabilize the zip-top bags and make clean up a breeze 🙌.

Greek Lemon Chicken Marinade

Flavor Profile
This Greek lemon chicken marinade is fresh, tangy, garlicky, and herb-forward 🌿.

Key Ingredients
Olive oil, lemon juice, garlic, oregano, salt+pepper, and Dijon mustard.

Best Served With
It works great as a topping for rice bowls, stuffed in pita wraps, or served alongside my Authentic Greek Salad 🥗 and these Greek Lemon Potatoes.

Prepare it fresh
Combine the marinade and chicken thighs in a bag, toss to combine, and refrigerate for 2-8 hours. Because this recipe is lemon-based 🍋, it’s best to avoid marinating it for more than 24 hours, as the acidic lemon base can break down the chicken’s texture.

Prep for the Freezer
Place the chicken in a freezer bag, add the marinade, massage to coat, squeeze out any excess air, and freeze immediately. It will keep for up to 3 months.

Asian Ginger Garlic Chicken Marinade

Flavor Profile
Savory, aromatic, gingery, and slightly sweet.

Key Ingredients
Soy sauce, honey, rice vinegar, sesame oil, garlic, ginger 🫚, and, optionally, red pepper flakes if you like a little spice.

Best Served With
Rice 🍚, noodles, stir-fried veggies, lettuce wraps, and bowls. Additionally, it goes great with my Vegetable Fried Rice, Asian Cucumber Salad, and Asian Style Green Beans.

To Prep it Fresh
Marinate the chicken in the fridge for 2-8 hours.

Freezer Prep
Mix the marinade ingredients and chicken in a zip-top bag and freeze immediately. The chicken will marinate naturally as it thaws in the freezer.

Piri Piri Chicken Marinade

Flavor Profile
Smoky, citrusy, garlicky, and spicy 🌶️.

Key Ingredients
Olive oil, lemon, garlic, smoked paprika, oregano, onion powder, salt+pepper, and, optionally, cayenne.

Best Served With
Wraps, grain bowls, and my Crispy Roasted Sweet Potatoes 🍠 or Oven Roasted Vegetables.

Adjust the Heat
Feel free to increase, reduce, or eliminate the cayenne altogether to customize the heat level without changing the rest of the recipe.

Fresh or Freezer Prep
For fresh chicken, marinate 2-8 hours. Additionally, freeze immediately for an easy, make-ahead meal.

Freezer Instructions 🧊

1. Place 8 boneless, skinless chicken thighs in each freezer bag.
2. Add one prepared marinade and massage thoroughly.
3. Remove as much air as possible.
4. Seal, label, and freeze the bag flat for up to 3 months.
5. Include the flavor and freezing date on each label.
6. Thaw overnight in the fridge before cooking.
7. Cook until the thickest piece reaches 165F (74C).

How to Cook Marinated Chicken

Three chicken marinades, four easy cooking methods. The times below are general guidelines for boneless, skinless chicken thighs or breasts 🍗. (Note: I have not tested all of these, so you will have to experiment!) Thicker pieces may need longer, while chicken breasts pounded to an even thickness will cook more quickly and evenly.

Oven
Preheat the oven to 425°F (220°C). Then, arrange the chicken in a single layer in a lightly greased baking dish or on a parchment-lined baking sheet.

Bake chicken thighs for 20–25 minutes, and chicken breasts for 18–25 minutes, depending on their thickness.

Grill
Preheat the grill to medium-high heat, about 400–450°F (205–230°C), and lightly oil the grates. Then, grill the chicken for approximately 5–7 minutes per side.

Stovetop
Heat a lightly oiled skillet over medium heat. Then, add the chicken in a single layer without crowding the pan 🥘.

Cook for approximately 5–7 minutes per side, reducing the heat if the outside is browning before the center is cooked.

Air Fryer
Preheat the air fryer to 375°F (190°C). Then, arrange the chicken in a single layer, and air fry chicken thighs for about 14–18 minutes and chicken breasts for 12–18 minutes, flipping halfway through.

How to Check for Doneness
For every method, the chicken is done when an instant-read thermometer🌡️ inserted into the thickest part reaches 165°F (74°C).

Common Questions

Does chicken marinate while it thaws?

Yes. The marinade begins working as the chicken slowly defrosts in the refrigerator.

Should I marinate the chicken before freezing it?

No. Add the marinade and freeze the chicken immediately. Leaving it in the refrigerator first adds unnecessary marinating time, particularly for recipes that contain acids like lemon juice.

How long can marinated chicken stay in the freezer?

For the best quality, use it within 3 months.

Can I freeze chicken breasts in these marinades?

Yes. Use the standard marinade amount for 2½–3 pounds of breasts. Additionally, increase it by approximately 50% for about 4 pounds.

How long should fresh chicken marinate?

Marinate fresh thighs or breasts for 2–8 hours. Do not leave lemon-based marinades on the chicken for more than 24 hours as it will break down the proteins and create a stringy, mushy texture.

How do I know when the chicken is cooked?

Insert an instant-read thermometer into the thickest part. The chicken is safe to eat when it reaches 165°F (74°C).

Ingredients

🇬🇷 Greek Lemon (8 chicken thighs)

  • 1 tablespoon olive oil
  • ¼ cup fresh lemon juice, 60 ml
  • 4 garlic cloves, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Dijon mustard, optional

🥢 Asian Ginger Garlic (8 chicken thighs)

  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 tablespoons honey , or maple syrup
  • 2 tablespoons rice vinegar
  • 4 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes, optional

🌶️ Peri Peri (8 chicken thighs)

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 1 tablespoon smoked paprika
  • 2 teaspoons oregano
  • 1 teaspoon onion powder
  • ¾ teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne, optional

Instructions

Freezer Instructions

  • Place 8 boneless, skinless chicken thighs in each freezer bag.
  • Use a bag holder to help the bags stay open without the mess.
  • Add the marinade and massage to coat. Remove as much air as possible and freeze flat for up to 3 months. Alternatively, you can let the chicken sit in the marinade in the fridge overnight and cook it the next day.
  • If freezing, thaw overnight in the refrigerator before cooking.
  • Cook until the chicken reaches an internal temperature of 170-175°F.

To Make with Chicken Breasts

  • For 8 boneless, skinless chicken breasts, use the same marinade quantities if the breasts total about 2½–3 lb (1.1–1.4 kg). If they’re very large (closer to 4 lb / 1.8 kg total), increase the marinade by about 50%.
  • For fresh chicken, marinate for 2–8 hours. Avoid marinating the lemon-based marinades for more than 24 hours. If you’re freezing the chicken, add the marinade and freeze immediately. As the chicken thaws, it will marinate naturally.
  • Cook the chicken until it reaches an internal temperature of 165°F (74°C). If the breasts are very thick, consider pounding them to an even thickness so they cook more evenly and stay juicier.
  • The Greek Lemon, Asian Ginger Garlic, and Piri Piri marinades all work just as well with chicken breasts as they do with thighs. Thighs are simply a bit more forgiving if slightly overcooked, while breasts benefit from being cooked just to temperature.

Nonna’s Notes

Chicken: These marinades are written for 8 boneless, skinless chicken thighs. You can also use chicken breasts. Use the same amount of marinade for 2½–3 pounds of chicken, or increase it by about 50% for 4 pounds.
Fresh preparation: Marinate chicken in the refrigerator for 2–8 hours. Avoid marinating the Greek Lemon chicken for longer than 24 hours.
Freezer preparation: Add the chicken and marinade to a freezer bag, remove as much air as possible, and freeze flat for up to 3 months. Thaw overnight in the refrigerator.
Cooking: Discard the used marinade and cook the chicken until the thickest part reaches 165°F (74°C).
For even cooking: If using thick chicken breasts, pound them to an even thickness before marinating.
