Creamy, naturally sweet Healthy Banana Pudding made with ripe bananas, yogurt, cookies, honey, and vanilla—ready in just 5 minutes for the perfect breakfast, snack, or light dessert 🍌.
Note: on my photo I layered a few more cookies in between but feel free to add as much or as little as you like.
Mash the banana well in a bowl or plate until smooth and creamy.
Add the yogurt, honey to taste, and vanilla bean paste. Mix until fully combined.
Assemble in a cup by layering in the following order: banana pudding, crushed cookie(s) or whole, banana pudding, sliced banana, and finish with a crushed cookie on top.
Notes
Banana ripeness: The spottier the better—riper bananas are naturally sweeter, so you may not need much honey at all.
Yogurt swap: Greek yogurt adds extra protein and a thicker texture. Coconut yogurt works for dairy-free.
Cookie options: Vanilla wafers, graham crackers, or any crunchy cookie you love work here.
Storage: Best eaten fresh, but can keep covered in the fridge for up to 1 day. The cookies will soften, which is still delicious. Freezing is not recommended.
