Instructions
Take 4 cups of broth (like my homemade broth below, or you can use store-bought) and simmer in a pot on the stove.
To make homemade chicken broth, first add 10 cups of water to a big pot. Then put in whole peeled veggies like carrots, onion, celery, peeled garlic, and leeks. Now, bring all of this to a boil, and then add salt and 4 chicken thighs (or any cut of chicken), and let it boil for one hour. I used four cups of this broth for my base.
Drop in the dumplings and cook until they float to the top (approximately 2 minutes).
Now for the finishing touches, add chili oil (optional, omit if you don't like heat), hoisin sauce, and garnish with scallions.
