Ingredients
  

  • 6 bone in skin on, chicken thighs
  • drizzle of olive oil — 1 tablespoon
  • salt to taste if the pizza sauce isn’t salty
  • pizza sauce — I love Rao’s
  • olives + a touch of olive juice is optional

Instructions
 

  • Preheat the oven to 400°F and add the chicken thighs to an 8 x 8” oven dish or any you have on hand.
  • Add a touch of olive oil, pinch of salt if needed and a heaping tablespoon of the pizza sauce onto each one.
  • Optionally add the olives with a little bit of the olive juice. I used Kalamata and green olives but you can use any you like.
  • With clean hands give it and give everything a nice massage and bake uncovered for 45 minutes to an hour. Enjoy on salad, mashed potatoes, or vegetables.

Notes

The olives + tablespoon of olive juice is optional but pairs so well for me personally. Add a pinch of salt if the pizza sauce is already salty. Make sure you get a good quality pizza sauce with good ingredients because that will make all the difference. Mine is by “ Rao’s ” and you can find it practically everywhere. Bake time will depend on the oven anywhere from 45 min – 1 hour so keep an eye on it. You can absolutely do this with any cut of chicken such as chicken breast but chicken breast will take anywhere from 15 to 25 minutes to cook depending on how thick it is or if it has a bone in it as well so use a meat thermometer if needed. Skin on, bone in breast can take 20-25 minutes and skinless boneless chicken breast can take 15-20 depending on thickness of course. You can definitely skip the olives and olive juice and add some cheese on top at the end to melt and it will be incredible.
